Happy Spring everybody! We’ve still got plenty of snow on the ground here but soon there will be buds on the trees and even sooner, Easter! Here are some of my favourite Easter baking recipes to sweeten this weekend’s festivities.
1. Chocolate hen’s nest pie from Ricardo Cuisine. I ran all over town hunting for a chocolate hen to put on the top like the recipe calls for when I made this last year, and settled for these cute bunnies from Shopper’s. Bake the chocolate wafer crust yourself or buy one ready-made, then fill with the rich mousse filling and refrigerate until ready to serve.
2. and 3. Bunny, carrot and radish sugar cookies. You might remember the bunnies from my review of Sweetapolita’s cookbook last year. This year I did the veggies using the same cookie and royal icing recipes. They’re not difficult to bake (really!) and so fun to decorate. I found the bunny cookie cutter at Bulk Barn and the carrots and radish cookie cutters are from an adorable Meri Meri set (no longer available online) that Renee found for me at HomeSense.
4. This marbled chocolate bundt cake from Ricardo Cuisine was a huge hit last year and my kiddos are already asking for it again. We like big bundts and we cannot lie! And that ganache! Irresistible.
