Tell me you’ll make these s’mores brownies + A giveaway! (Only all the Loacker crispy wafers you could ever want)

If you’ve been reading my blog for a while you know I’m about as outdoorsy as that lamp over there. (I’m pointing to a tall reading lamp in the living room that I wouldn’t normally draw attention to but I’ve just dusted it, so feel free to hold it in your mind’s eye for as long as you like. It’s very shiny.) No surprise then that I’m a big fan of today’s s’mores brownies recipe from Loacker, maker of crispy wafers in all kinds of delicious flavours. They’re like a taste of the cottage right at home, like being around the campfire — only without the camp or the fire, ha ha.

They’re also suuuuper chocolately. According to a Loacker survey, chocolate is Canadians’ favourite sweet flavour. Maple ranked sixth behind strawberry, vanilla, blueberry and raspberry. (Surprising, eh? Maple was #1 in Quebec but #6 overall.) That same study, the Savour Serenity Survey, found that 73% of Canadians wish they had more time to unwind; 56% love to unwind with loved ones, and 42% enjoy relaxing with a coffee and a biscuit. With these findings in mind, Loacker created iconic desserts celebrating Canada’s favourite flavours that are indulgent, easy to prepare and meant to be shared. Herewith the s’mores brownies!

These really were easy to make. First you line a pan with Loacker’s Cocoa & Milk wafers.

Next you make an easy brownie batter that gets poured over top and then you bake it in the oven for 35 minutes.

Pour marshmallows over the finished brownies and stick the whole thing under the broiler until the marshmallows are toasty brown. (You’ll need to keep a close eye — they can go from brown to burnt in a heartbeat.)

S’mores Brownies

· 1 package of Loacker Cocoa & Milk Wafers
· 1 batch of brownie batter (*see recipe below)
· 1 (280g) bag marshmallows
· Preheat oven to 350 degrees Fahrenheit and line a 9” square baking pan with parchment paper.
· Layer the bottom of pan with wafers.
· Pour brownie mixture over the layer of wafers.
· Bake for 35 minutes and then remove from oven and top with marshmallows.
· Pre-heat broiler and return baking pan to oven and broil until marshmallows are toasted and golden – watching it carefully the whole time.
· Let cool for 10 minutes before slicing into squares to serve.
· 3/4 cup vegetable oil
· 1 ½ cups sugar
· 1 ½ TSP vanilla extract
· 3 eggs
· 3/4 cup flour
· 1/3 cup + 2 ½ TBSP cocoa
· ¼ TSP + 1/8 TSP baking powder
· ¼ tsp salt
· 1 cup chocolate, roughly chopped
1. Mix together the oil, sugar and vanilla extract.
2. Add eggs and mix until well combined.
3. In a separate bowl, combine flour, cocoa powder, baking powder and salt.
4. Slowly add dry ingredients into the wet ingredients, folding until well combined.
5. Fold in chopped chocolate.
6. Pour over layer of wafer biscuits and following remaining instructions for Smore’s Brownies.
